Cobb Salad with Quinoa

Busy life and lack of time often makes us eat unhealthy and on the go. This week I’m trying to change this cycle and make healthy meals for us. I don’t usually like salads for dinner and don’t really consider them to be a meal on its own, but this one was very feeling and satisfied all our cravings.


1 cup of uncooked quinoa
Half a bunch of spinach
2 tomatoes
2 avocados
4 eggs
3 strips of chicken bacon
2 chicken breasts


1/3 cup olive oil
1 tbsp german mustard
Juice of 1 lemon

Cook quinoa according to the directions on the package. In the meantime boil eggs, slice chicken breasts lengthwise so they are thin and easy to cook. Season chicken with paprika, salt and pepper, put it in a frying pan with a little bit of olive oil, fry from both sides until ready. Cook bacon until crispy and cut it into small pieces. Slice tomatoes, avocados, and boiled eggs. After quinoa is chilled, add everything to the bowl, combine ingredients for the dressing and mix. Season with salt and pepper.
